Shakshuka is a dish of eggs poached in a sauce of tomatoes, peppers, and onions. In its present form it is of Tunisian origin, and is now popular among many ethnic groups of the Middle East and North-Africa. Healthy, tasty and quick for a lunch or evening meal that’s a meat-free alternative. Serves 4.


1 red onion
2 crushed garlic cloves
1 sliced red pepper
1 sliced yellow pepper
1tsp smoked paprika
1 tsp rapeseed oil
400g tin chopped tomatoes
4 eggs
Feta cheese to crumble


  • Fry the onion, garlic, peppers and paprika in the oil until soft
  • Add in the tomatoes and simmer for 10 mins
  • Create 4 indentations in the mixture and crack an egg into each one. Cover with a lid and cook for 8-10mins until the whites of the egg are cooked and the yoke is still runny.
  • Sprinkle with feta.
